a favorite pastime of mine…baking…so I thought I would share a lovely recipe for Peach Cobbler…enjoy

cobbler filling:

4 cups peeled/sliced fresh peaches (or 3 cans sliced peaches, well drained)

3/4 cup brown sugar

1 tsp. cinnamon

1 tsp. vanilla

1 tbsp. flour

 

cobbler crust:

1 cup flour

1 tsp. baking powder

1/2 tsp. baking soda

3 tbsp. brown sugar

4 tbsp. butter, cut into small pieces

2/3 cup buttermilk

1 tbsp. brown sugar, for topping

Directions:

preheat the over to 425 degrees F

Generously butter a 1 1/2 quart shallow baking dish. In a large bowl, mix the sliced peaches, brown sugar, cinnamon, vanilla and flour. Pour into baking dish, spread evenly. Bake for 10 minutes.

Meanwhile, combine all dry ingredients for cobbler crust in a bowl. Cut in the butter with a pastry cutter or your fingers to make the texture like coarse crumbs. Add buttermilk and stir just to combine the ingredients.

Remove fruit from oven and drop rounded spoonfuls of dough on top. Sprinkle with last tablespoon of brown sugar. Return to oven. Bake until fruit is bubbly and crust topping is golden brown, about 20 min. Serve warm with whipped cream or vanilla icecream.

I R O N S T O N E

my favorite thing to collect…

old white ironstone…cracked or chipped…LOVE it. Each piece has it’s own aged patina…worn with time…pitchers…bowls…plates (stacks and stacks)…

use them…everyday spoons are quick to grab when placed in an ironstone pitcher or sugar bowl on a kitchen counter…maybe an ironstone platter with mugs on a desk to hold pencils, paint brushes, markers, paper clips…a large ironstone bowl with pedestal can hold oranges, limes…or…bars of white soaps…so many uses for these lovely pieces…
